The premanufactured cake mix is mixed with water, poured into bundt cake molds, placed into rolling racks, and baked into cakes of various flavors and sizes in the oven. No grease laden vapors are generated in this process that would require the use of a type 1 hood and the ancillary components that go along with type 1 hood construction. The hood we use is dual rated for type 1 or 2 use but the strict NbC process and product does not, and will not, make use of the oven in a manner necessitating a type 1 rating.
